How It's Made

1

HMMA Base Production

Soy protein flour is processed through our Coperion ZSK 54 HMMA extruder to create the textured protein base. This produces a fibrous, meat-like material with over 50% soy protein flour on dry basis - the foundation for all our RTC products.

2

Cutting & Forming

Multiple cutting and forming machines shape the HMMA base into the desired format - keema mince, slices, chunks, patties, nuggets, kebabs, or drumstick shapes. Custom shapes available for brand-specific products.

3

Coating & Seasoning

Products pass through our 3-pass coating line for consistent, even coverage. Batter, breading, and seasoning are applied in controlled layers. Custom coating formulations developed for each customer.

4

Frying & Cooking

Coated products go through the continuous fryer for uniform cooking and crispy texture. Temperature and time are precisely controlled for consistent results across every batch.

5

Freezing & Packaging

Products are rapidly frozen using spiral and blast freezers with ammonia refrigeration. Automated packaging lines handle retail packs and bulk formats. Cold chain maintained from production to dispatch.

Frequently Asked Questions

What types of protein snacks can Zippy manufacture?+
We manufacture the full range: B2B ingredients (keema mince, protein slices, chunks, shawarma strips, cheese analogue), hand-folded products (momos, spring rolls), and formed products (nuggets, patties, kebabs, drumsticks). All made from HMMA-extruded soy protein with no maida. Custom shapes and formulations available.
Can Zippy do private label protein snacks?+
Yes, private label is our primary business model. We handle everything from product development to packaging. You get a finished, retail-ready product with your branding. Current customers include major QSR chains, D2C brands, and retail private labels. Development timeline: 4-8 weeks for custom products.
What makes HMMA protein snacks different from TVP-based products?+
TVP (textured vegetable protein) uses dry extrusion - the result is spongy, with uniform texture that doesn't resemble real meat. HMMA (High-Moisture Meat Analog) uses our Coperion twin-screw extruder at high moisture and shear to create layered, fibrous protein with realistic meat-like texture. The difference is immediately noticeable in taste, mouthfeel, and cooking behavior.
What is the shelf life of frozen protein snacks?+
Frozen RTC products have 12-month shelf life at -18C. Our spiral and blast freezing with ammonia refrigeration ensures rapid, uniform freezing that preserves texture and flavor. We maintain 300 MT cold storage capacity for buffer stock and quick dispatch.
